A while back, I was setting up our booth at the Issaquah Farmers Market. I got to chatting with our vendor neighbor, who sells goat milk, along with meat and eggs. Out of nowhere, she dropped an absolute culinary bombshell on me:
“When you combine goat milk and raw honey, they trigger a beautiful chemical reaction. The unique fat and protein structure of the goat milk coaxes out and draws forward all the hidden flavor notes of the honey, and it makes the most unique combination.”
Naturally, my mind started racing. If goat milk and honey are a match made in scientific heaven, what would happen if we introduced the earthy, vibrant notes of matcha to the party?
The answer is this Goat Milk Matcha Latte. It is easily one of the most beautiful, delicate, and harmonious flavor profiles I have ever tasted.
For this original recipe, I naturally used the more floral and delicate honey we produce; our Mountain Berry Private Reserve. This is a unique, seasonal honey that is pretty limited based on our harvest. If I had to choose another honey to try this with, I would try it with our new Vetch honey. This is a honey with a very subtle flavor that is pretty mild. I think that the goat milk would introduce flavors that I wouldn’t be able to discover simply on it’s own.
